I have said it over and over again, and I will say it again, plant foods, especially vegetables, are the backbone to any healthy diet. You essentially want to be eating the rainbow full-time to keep your body cleansed, and energised. Oh, and by eating the “rainbow”, this doesn’t include Skittles unfortunately 🙁 ! I know. I feel you. While I can see how the urge to crush a bag of these multicoloured candies is a tempting prospect, this will leave you with nothing but a big sugar hangover. No fun. If I am going to be hungover, I don’t want to feel that way from food and likely neither do you, so make vegetables your rainbow of choice and know that you can prepare them in a way that makes them more delicious and comforting than any bag of candy.
I find in winter time, roasting a wide variety of vegetables makes it easier for me to incorporate more of them into my diet. Raw vegetables tend to be ultra cooling to the body so cooking them is a good trick for me to keep up you my veg intake while bringing in more heat to the body during the colder season. This warming roasted roots & apple recipe meets all the criteria for me and it’s a great side dish to add onto any meal.
Try this recipe out and if it’s just you, stick with making the recipe full size as you will then have extra vegetables already prepared and ready to go.
- 2 Sweet Potatoes (peeled)
- 4-6 Carrots
- 2 large beets (peeled)
- 2 apples (cored)
- 2 T apple cider vinegar
- 2 T coconut oil
- 2 T herbes de Provence
- 1 tsp sea salt
- 1 tsp black pepper
Preheat oven to 425.
Chop all vegetables and apples roughly and place into a large bowl.
Add apple cider vinegar, coconut oil, herbs, salt & pepper into bowl and mix/coat vegetables thoroughly. I like using my hands for this.
Roast in oven on a large roasting pan for approximately 1hr until fork tender. At about 30 minutes in, mix/toss vegetables and return to oven.
